In the process according to the transacetalation reaction with propene-glycol, a saccharide component (B) containing starch or partial starch decomposition products is first added to a reaction medium (A), comprised of at least propene-glycol and an acid catalyst and, optionally, higher (C8-C18) fatty alcohol, said reaction medium being heated to 100 to 130 DEG C. This first produces propene-glycol-glucoside, which is transacetalated with fatty alcohol. The molar ratio of fatty alcohol to propene-glycol is no greater than 1. By a transformation process known per se, a substance which is chromatically stable in the alkaline range and has a high content in C8-C18 alkylmonoglucoside is produced. The quantities of propene-glycol and fatty alcohol recovered by distillation can be recycled without further transformation steps.
