PURPOSE:To obtain the title composition having a wide range of plasticity, excellent extending and stretching properties by using an oil-in-water type emulsified fat and oil composition comprising a specific water phase containing a sucrose fatty acid monoester or a polyglycerin fatty acid monoester and gelatin and oil phase. CONSTITUTION:An oil-in-water type emulsified fat and oil composition comprising 10-30wt.% water phase containing 0.2-3.0wt.% based on the whole composition of a sucrose fatty acid monoester or a polyglycerin fatty acid monoester having >=5 degree of polymerization and 0.01-0.5wt.% (based on the whole composition) gelatin (powdery gelatin) as an emulsifying agent and 70-90wt.% oil phase comprising fats and oils (e.g. cream or lard) or dissolving an oil-soluble emulsifying agent (e.g. propylene glycol fatty acid ester) is further blended with salt, preservative, etc., at 40-80 deg.C while stirring to give the aimed composition. |
