PURPOSE:To obtain an albumen composition having excellent frothing power and hardness even in the presence or absence of sugar by adding a surfactant and a polysaccharide to albumen. CONSTITUTION:The objective composition is produced by adding preferably 0.05-5.0wt.% of a surfactant (preferably saponin or yucca foam) and preferably 0.1-0.5wt.% of a polysaccharide (preferably pullulan, xanthan gum, locust bean gum, tamarind gum or guar gum) to albumen. |
