PURPOSE:To easily prepare short noodles in cooking with hot water and to improve the shape-retainability of the noodle in a bag by forming a plurality of constricted parts on the noodle in the direction of length across the width before slitting a noodle strip into noodle strings. CONSTITUTION:A kneaded raw material 1 supplied from a feeder is treated with plural rough-finishing rolls 2a, 2b and fine finishing rolls 3a, 3b and the obtained noodle strip 25 is treated with a constriction-forming mechanism 4 having rolls 6a, 6b. The outer circumference of a roll 6a of the mechanism 4 has a ridge 7 formed in a state to form a curve from the center to both ends in the direction opposite to the rotary direction of the roll 6a. A constriction 26 extending lateral direction is formed on the noodle strip 25 in the course of passing the strip through the rolls 6a, 6b. The noodle strip 25 having the constriction 26 is linearly slit into noodle strings 27 with cutter rolls 5a, 5b. The noodle strings 27 are separated to both sides of the engaging line of the rolls 5a, 5b. The noodle strings are fried in an oil to obtain oil-fried noodles 33. |
