PURPOSE:To obtain a raw material for soy sauce or MISO (fermented bean paste) by spraying water to crushed soybean and steaming under a steam pressure of >=2.0kg/cm<2>.G. CONSTITUTION:Whole soybean or skinned soybean is crushed with a breaker, crusher, etc., to about 1/4-1/8 and soaked with water by spraying 100% (based on the soybean) of cold or warm water. The crushed soybean is steamed under a pressure of >=2.0kg/cm<2>.G (preferably 3-5.5kg/cm<2>.G) for <=100sec. The pressure may be slowly released after steaming or the steamed soybean may be expanded by abruptly discharging into a low-pressure atmosphere, e.g. in air. The crushed and steamed soybean is suitable as a raw material for soy sauce and MISO. For example in the case of preparing soy sauce, the treated soybean is cooled, blended and inoculated with malt by conventional method to obtain malt for soy sauce. |
