PURPOSE:To prevent the coagulation and precipitation of thaumatin and improve the characteristic lasting sweetness of thaumatin in the palate by compounding thaumatin with chitin, chitosan or their derivatives. CONSTITUTION:One pt.wt. of thaumatin is compounded with <=100 pts.wt., preferably 1-10 pts.wt, of chitin or its derivative such as chitosan, chitin or glycol chitin and, as necessary, further with <=100 pts.wt., preferably 10-50 pts.wt. of ascorbic acid or its derivative. |
