摘要 PURPOSE:To provide an emulsifier for food and an agent for improving the quality of bread, containing lysophosphatidic acid or its salt as an active component. CONSTITUTION:Lysophosphatidic acid (LPA) or its salt (a phospholipid mixture having high LPA content is prepared by treating a phospholipid mixture with phospholipase D and phospholipase A) is used as an emulsifier for food. When the emulsifier is added to wheat flour at a ratio of 0.01-5.0% (W/W), the machine-handleability of the dough can be improved, and the baked product having excellent tissue and touch can be obtained.
