摘要 PURPOSE:To readily provide a cooked fish fin-like food having good thermal stability and sufficient strength and similar to foods made from natural fish fins such as shark fins by crosslinking and gelatinizing a composition composed of gelatin and/or collagen with a transglutaminase. CONSTITUTION:A composition of gelatin and/or collagen (preferably collagen fiber, collagen fibril and/or collagen solution) is crosslinked with a transglutaminase for forming a gel to provide a cooked fish fin-like food having good gloss and rich elasticity.
