METHOD FOR RACEMIZING ASPARTIC ACID

PURPOSE:To make it possible to utilize inexpensive L- or DL-aspartic acid as an amino acid donor of D-transamynase reaction by industrially and advantageously racemizing aspartic acid using a specific enzyme. CONSTITUTION:D-, L- or racemic aspartic acid is racemized in an aqueous solution containing an aspartic acid racemase (preferably derived from Streptococcus thermophilus IAM10064) derived from a lactobacillus, preferably at 30-45 deg.C and 6-8.5pH.
