The invention relates to a process for the manufacture from wood of a substrate for growing mushrooms. The process is characterised in that it consists in retaining, from the starting material, from the wood in trunk or log form for example, only the sapwood, by debarking, delignifying, chopping or other suitable technique, in fragmenting 3 the said sapwood into shavings or chips of a specific particle size, in reducing, in the said shavings or chips, the concentration of chemical substances which are known for their biostatic or toxic effects on the mushroom, such as terpenes, phenols, polyphenols, resins and hydrocarbon essences, for example, by evaporation and solubilisation 10 of the said substances in high pressure steam and at a temperature between 120 DEG C and 250 DEG C, for a time of between 15 seconds and 20 minutes, and then in abrupt separation 13 of the wood fragments from the steam enriched with the extracted substances, under temperature and duration conditions suitable for the species of the starting material, and in destroying 12, by grinding, pulping or other suitable technique, the structure of said wood fragments with a view to giving them a greater specific surface and increased macroporosity and water retention.
