PURPOSE:To obtain a gummy matter useful as a thickener, densifier, stabilizer, etc., for foods, cosmetics, pharmaceuticals, etc., utilizing waste shell of cacao nuts by adding water or hot water to shell of cacao nut and extracting soluble components from the shell. CONSTITUTION:The objective gummy matter resistant to precipitation even by the addition of (A) 0.5 pts.wt. of dioxane, (B) 1 pt.wt. of ethanol, (C) 1 pt.wt. of ethanol hydrochloride or (D) 1 pt.wt. of trichloroacetic acid (based on 1 pt.wt. of the gummy matter) is produced by adding 3-50 pts.wt. of water or hot water to 1 pt.wt. of the shell of cacao nut preferably after deactivating the action of enzymes in the shell and extracting the soluble components of the shell. |
