PURPOSE:To prepare DAIFUKU-MOCHI (rice cake stuffed with sweetened bean jam) resistant to freezing and having long relishable period by adding hydrated swollen material containing glucomannan to soaked glutinous rice, pounding the mixture, stuffing the rice cake with bean jam, forming the cake and freezing the product. CONSTITUTION:Soaked glutinous rice is mixed with a hydrated swollen material consisting of glucomannan and/or a mixture of glucomannan and a subsidiary raw material such as starch. The mixture is pounded, subjected to adding treatment such as stuffing of bean jam, formed and frozen to obtain the objective frozen DAIFUKU-MOCHI giving the taste and palatability of freshly prepared DAIFUKU-MOCHI by thawing. |
