PURPOSE:To obtain fats and oils suitable for preparing an emulsified product capable of keeping a stable emulsified state even by preserving or stirring at low temperature by subjecting mixed oils of light palm oil and laurin-based fats and oils to selective ester interchange treatment at the 1- and 3-positions. CONSTITUTION:The objective fats and oils obtained by subjecting mixed oils of light palm oil having preferably >=55 iodine value and laurin-based fats and oils having >=30% lauric acid content in an amount of (1/10)-(3/2) times based on the light palm oil in the minimized state of water using a lipase (formulation), etc., to selective reaction and ester interchange at the 1- and 3-positions. The above-mentioned mixed oils may further contain a liquid oil in an amount of >=1/10 (preferably >=1/5) based on the light palm oil. |
