摘要 The invention relates to a process for the industrial preparation of a product which is originally provided in the form of an oil-bearing nut of shelled coconut and which, called kernel, is composed of a fibre fraction, a flavoured oil fraction and a cellular liquid fraction. This process is remarkable in that it consists: - in a first stage, in paring off the brown cuticle, in washing, in disinfecting, in rinsing and in draining the shelled kernel; - in a second stage, in grinding the said kernel using a grinding cylinder at a preset pressure, in order to separate the fibre fraction from the oil fraction and from the cellular liquid fraction; - in a third stage, in scalding the said fibres in order to extract the excess oil fraction and cellular liquid fraction inside the fibres; - in a fourth stage, in cooling, in draining and in drying, using hot air, the said fibres in order to reduce their moisture level from 60% to 5% water; - in a fifth and final stage, in comminuting the said dried fibres in order to obtain a finely divided powder called coconut flour. Applications: industrial preparation of new composite food products obtained from dearomatised coconut flour.
