发明名称 METHOD FOR MEASURING QUANTITY OF POLYMERIZED ACID PHOSPHATE IN FROZEN MINCED FISH
摘要 PURPOSE:To make it possible to perform measurement with good reproducibility readily in a short time by increasing the temperature of frozen minced fish in which homogenized and polymerized acid phosphase is added in buffer solution, and increasing the degree of dissociation so as to exceed the buffer capability of solution. CONSTITUTION:When the quantity of polymerized acid phosphate in frozen minced fish is measured, the frozen minced fish is homogenized in buffer liquid incorporating potassium chloride or sodium chloride. The frozen minced fish is added into the same buffer liquid 5. The temperature is increased at a constant temperature increasing speed. The change in pH in the entire system is measured and compared with a reference value. The quantity of the polymerized acid phosphate is measured, and the quality of the frozen minced fish is judged. The polymerized acid phosphate is added before freezing. The addition of the potassium chloride or the sodium chloride into the buffer liquid 5 is performed for extracting ATPase in the frozen minced fish. In the measuring apparatus, a pH electrode 2 which is connected to a pH meter 1 and an agitating rod 3 are immersed in a constant temperature bath 4 wherein the buffer liquid 5 is inputted for this purpose. Homonizing liquid for the frozen ground fish meat is added into the liquid 5. The measurement is performed under the constant temperature conditions.
