They consist in the machine having an enclosed (faired, streamlined) bed plate 1 with entry 8 and exit 9 for the hams 7, with a succession of cylindrical brushes 2 which all rotate in the same direction, and a plurality of spraying members 4; under said brushes 2 is incorporated a bed for supporting and conveying the hams 7 which consists of a series of horizontal, transverse and idle rollers 3 which form an entry section 11 with a steep slope, a long main section 12 which runs under the brushes 2, and an uphill section 13, close to the exit, a brake device, which can be graduated, for the emerging hams 7b having been interposed on said upward slope 13 in the manner of a transverse barrier 15.
