<p>PURPOSE:To prepare edible fiber havig excellent color tone and suitable for mixing with other foods, by slicing fresh beets to cossettes, heating and sieving the cossettes, and pulverizing the residue on sieve. CONSTITUTION:Fresh beets are washed, and sliced to cossettes. After or withot extraction of sugar, the cossettes are heat-treated at a cossette temperature of >=85 deg.C for >=30sec. The heat-trested cossettes are subjected to successive dehydration, drying, and sieving, and the beet cossettes residue on sieve are pulverized. The sugar-content of the cossette has no effect to discoloration of the product, and the cossette after or without extraction of sugar may be used as the raw material, however, it is desirable to use the cossettes containing naturally existing sugar as the raw material since the product prepared therefrom has milder feeling to the palate. As the powder passed through a 18-mesh sieve contains a large amount of SiO2 originated from soil, the cossettes to be pulverized should be the residue on the 18-mesh sieve. The pulverized beet passing through a 150-mesh sieve is rich in edible pectin and hemicellulose components, and is suitable as the objective product.</p> |
