Improved process for composting natural organic plant wastes 1, of the type in which: - the plant mass 1 to be decomposed is inoculated with bacteria 3; - this mass 2 is placed in the form of a windrow 4 in a tunnel, where it is left to decompose in contact with air and light; - then, the decomposed material obtained is dried 8; - finally, this material is ground 9 and the powder obtained is packaged 11, 12, characterised: - on the one hand, in that during the decomposition stage 4, air 5 is blown into the core of the windrow; - and, on the other hand, in that, when the decomposition stage 4 is finished, but before beginning the drying phase 8, the decomposed material is subjected to a ripening stage 7 by reinoculating it with bacteria 6, and then spreading the mixture in a layer under a tunnel, and in leaving this layer to develop in contact with the air. <IMAGE>
