COLORING OF OIL AND FAT WITH WATER-SOLUBLE PIGMENT

PURPOSE:To perform coloring of an oil and fat product with a water-soluble dye by dissolving a food emulsifier in an oil and fat product for food and adding a water-soluble food dye to the mixture or adding the dye simultaneous to the dissolution of the emulsifier. CONSTITUTION:A food emulsifier composed of one or more components selected from oleophilic polyglycerol fatty acid ester, polyglycerol condensed ricinoleate and oleophilic sorbitan fatty acid ester is dissolved in an oil and fat product for food and then a water-soluble dye for food is added to the mixture to effect the coloring of the oil and fat product with the water-soluble dye. The addition of the dye may be carried out simultaneous to the dissolution of the emulsifier. The amount of the emulsifier is preferably >=10 pts.wt. per 1 pt.wt. of the pigment.
