PURPOSE:To provide a devil's tongue having a porous, elastic and pounded fish cake-like tissue, being highly seasoned and permitting the easy removal of the smell thereof by a harsh taste-removing process by compounding water and the fine powder of the devil's tongue with wheat protein and milk salts in a specific ratio. CONSTITUTION:Processes in which 4.5-5.0 pts.wt. of wheat flour and <=0.8 pt.wt. of milk salts are mixed with 100 pts.wt. of water with stirring and 3.0-3.6 pts.wt. of the fine powder of devil's tongue is subsequently mixed with the prepared mixture with stirring to form a paste are executed for preparing the devil's tongue. When the other kind of the final product is prepared the milk salts (additive to prevent the generation of the smell of alkali devil's tongue) are not added and the following process is adopted. 100 pts.wt. of water is mixed with 1.0-1.5 pts.wt. of the wheat flour with stirring and subsequently mixed with 3.0-3.6 pts.wt. of the fine powder of the devil's tongue with stirring to form a paste. |
