PURPOSE:To prevent chemical smell and bitterness from remaining in a product by decoloring a heme-containing substance with O3 in the presence of an alcohol. CONSTITUTION:An acid is added to a hemoglobin-containing solution diluted with water so as to provide 1-5wt.% solid substance concentration. Thereby, the pH is regulated to 1.5-4.5 and the substance is gently stirred for 5-30min. Centrifugal force of 500-15000G is then applied to separate the solution into a heme concentrate and a globin concentrate. An alcohol (e.g., ethanol) in a volume of 20-70vol.% is then added to the globin concentrate, which is subsequently aerated with O3 in an amount of 50-300mg/Nl based on 100ml globin concentrate to carry out decoloring. An alkali (e.g., NaOH), as necessary, is subsequently added to regulate the pH thereof to 6.5-7.5. |
