The invention relates to a device for receiving, transferring and discharging offal taken from animal carcasses in an abattoir. It also relates to the method for implementing such a system. In the chain 100 for recovering the offal, the swing-trays ...n, n1, n2..., each comprising a compartment 12, are equipped at the front, if considering the direction F of advance of the conveyor 100, with a tray 30 and, at the rear, with a sleeve 31. These two elements are arranged such that the sleeve 31 of the swing-tray n which goes first is located above the tray of the swing-tray n1 which follows, thus forming a receptacle R intended to receive the red offal, the compartment 12 receiving the white offal. The red offal is discharged along a bend x at 90 DEG , during which the sleeve 31 sweeps the tray 30 and, at the end of the bend, is offset with respect to the latter. The invention applies to all abattoirs and, particularly, to those operating at a high rate. <IMAGE>
