PURPOSE:To continuously obtain the subject product in a large amount for a short time by successively predrying, seasoning, drying, smoking and cooling slices of a salmon sliced according to a specific method while conveying the slices with a netlike conveyor. CONSTITUTION:A predrying chamber 5 of a variable effective chamber length, seasoning jetting nozzles 6 and 6', a drying chamber 7, a smoking chamber 8 and a cooling chamber 9 of respective variable effective chamber lengths are initially and successively provided from the side of the stating end to the side of the terminal end of a netlike conveyor 4 capable of changing running speed to form a processing line. Meat slices of a salmon after dividing into three pieces of upper and lower slices and the backbone, removing unnecessary parts and processed in slicers 1, 2 and 3 are continuously arranged, fed to the running conveyor 4 and predried in the predrying chamber 5. A seasoning solution is then jetted from the jetting nozzles 6 and 6, applied and permeated into the respective meat slices. The meat slices with the applied and permeated seasoning solution are then conveyed and successively passed through the drying chamber 7, smoking chamber 8 and cooling chamber 9 on the processing line to afford the objective product. |
