摘要

PURPOSE:To obtain a food such as hamburger containing the starch of the devil's-tongue without damaging flavor of food by adding a paste made from the starch of the devil's-tongue prepared under an alkali condition to a food raw material and processing. CONSTITUTION:A paste made from the starch of the devil's-tongue prepared at pH9.0-10.3, preferably 9.5-10.2 is added to a food raw material, which is processed to give the aimed food.
