PURPOSE:To quickly produce wines having excellent flavor by fermenting raw material solution of fermentation containing low concentration of nitrogen in fermentation zone existing of yeast belonging to the genus saccharomyces of respiratory defient type. CONSTITUTION:A raw material solution of fermentation containing low concentration of nitrogen containing amino acid in a concentration of <4.5g/l is previously prepared and the raw material solution is fermented in a fermentation zone existing of yeast belonging to the genus saccharomyces of respiratory defient type (preferably saccharomyces cerevisiae) to afford the aimed wines. Besides, the raw material solution is obtained by fermenting a raw material solution containing high concentration of nitrogen having concentration of amino acid higher than concentration of amino acid of a raw material solution having desired low concentration of nitrogen in a fermentation zone existing of yeast belonging to the genus saccharomyces of normal type and reducing concentration of amino acid, then removing the yeast. |
