A machine (1) is used for skinning meat or fish or for removing the rind from bacon. The material to be processed is guided by a drawing roller (4) towards a blade (6). In order to hold the drawing roller, which is provided with a toothing (10), in a non-sliding fashion, there must be removal of residues hanging from it. To achieve this, there is provided a cleaning device (8) having a cleaning roller (9) and strippers (13) which engage in annular grooves (12). The toothings of the drawing roller (4) and the cleaning roller (9) are both essentially the same and have tooth profiles which are arranged in symmetrical or radial planes. Furthermore, the tooth profiles of both toothings have straight surfaces. As well as being easy to produce, such toothings ensure a particular advantageous engagement which ensures that the drawing roller (4) is cleaned thoroughly. The cleaning roller (9) can be subjected to pressure in the direction leading towards the drawing roller (4), especially in order to compensate for diameter tolerances and in so doing to ensure that contact with the drawing roller (4) remains consistently good. Furthermore, the cleaning roller (9) is also displaceable in an axial direction and is connected to a drive to permit oscillation (Figure 1). <IMAGE>
