The invention concerns a method and an arrangement for treating cheese grain in a cheese mould arranged in a cooking pan, by means of which method and arrangement it is possible to regulate the treatment of curd, grain preparation and pressing, which is to be carried out after pretreatment of the milk products, in the preparation of green cheese and beestings pudding on a cooking plate, in an oven and/or in a water bath in a cheese-preparation area of small-scale or large-scale kitchens. The whole process is carried out using cheese pan 1/cheese mould 2 combinations which can be fitted into each other in the form of truncated cones and whose relationship to each other is regulated by a slide 3 arranged steplessly between the pans 1 and the moulds 2. Heat treatment progresses during the preparation in the combinations on a cooking plate, in an oven and/or in a water bath from curdling temperature to pasteurization temperature, in oven up to 180 degree C. <IMAGE>
