<p>PURPOSE:To obtain brewed SAKE (Japanese rice wine) containing vitamins, minerals, etc., without any ingredients of offensive smell, drunken sickness, etc., by saccharifying and fermenting milled rice with embryo as a raw material. CONSTITUTION:Milled rice with embryo is polished to remove bran layers containing proteins, fats, etc. The resultant rice is then saccharified with KOJI mold and subjected to alcohol fermentation by action of yeast fungi to afford brewed SAKE.</p> |
