PURPOSE:To improve the taste of stevia sweetener, by converting stevioside microbiologically to beta-1,4-glucosylstevioside. CONSTITUTION:An aqueous solution containing 0.1-10wt% stevioside and 0.1- 30wt% beta-1,4-glucosylsaccharide compound (a saccharide compound having beta-1,4 bond of glucose, such as cellobiose, cellulose, partially decomposed cellulose, etc.) is made to react with yeast belonging to Rhodotorula genus (e.g. R. minuta IFO- 1540, R. marina IFO-1421, etc.) or an enzyme derived therefrom (e.g. beta-1,4-glucosyltransferase) at 3-10pH and 20-70 deg.C to obtain the objective beta-1,4-glucosylstevioside. |
