PURPOSE:To improve shelf stability of noodles in high safety without exerting bad influence on appearance of noodles by adding a preservative comprising an extract of Licorice root obtained by supercritical gas extraction method as an active ingredient to noodles. CONSTITUTION:Licorice root is extracted by supercritical gas extraction method (preferably by using carbon dioxide under 70-500kg/cm<2>.G at 30-100 deg.C) and the prepared extract is used as a preservative. Preferably 0.04-0.1% of the extract is added to noodles. |
