PURPOSE: To obtain a low-calorie fruit juice mix which has a specified acidity and viscosity and gives similar appearance and taste to those of a milk shake by incorporating a stabilizer, protein, frozen concentrated liquid in specified proportions. CONSTITUTION: This fruit juice mix of the purpose is produced by compounding (B) 0.05 to 1.5wt.% stabilizer (e.g. xanthan gum), (C) 0.05 to 1.5wt.% protein and (D) perfume, if necessary, and (E) water in (A) fruit juice having 30 to 75 Brix degrees so as to obtain 15 to 30 Brix degrees. The fruit juice mix has 3.0 to 4.4pH, 0.15 to 0.80 sum acidity, 350000 to 500000cps viscosity at -4.5 deg.C, and is produced from a frozen concentrated liquid having 40 to 150% overrun. |
