PURPOSE: To efficiently produce a gellan gum-gelatin gel by mixing gellan gum and gelatin by 1:20 to 1:50 weight ratio and adding specified amts. of a univalent or bivalent cations and a sealing agent to the mixture. CONSTITUTION: Gellan gum and gelatin are mixed by 1:20 to 1:50 weight ratio to prepared a mixture. Then 48.94 to 71.30wt.% of the mixture, 0 to 15.44wt.% univalent or bivalent cation or mixture of these, 28.70 to 35.62wt.% sealing agent are compounded to prepare a dry mixture compsn. Or, a mixture of gellan gum, gelatin, sugar, sulfur, acid and sealing agent is prepared, to which boiled water is added to dissolve while stirring for 2 to 20min. Then the dissolved soln. is cooled to form a gel to produce a gellan gum-gelatin gel. |
