PURPOSE:To enable quantitative production of gluconic acid and sorbitol by allowing the culture mixture of a bacterium in Zymomonas in a culture medium containing corn steep liquor as a nitrogen source, to react with glucose and fructose. CONSTITUTION:A bacterium in Zymomonas such as Zymomonas mobilis ATCC 29191 is cultured in a medium containing, as a carbon source, sucrose or glucose and, as a nitrogen source, one to three selected from corn steep liquor, cotton seed lees and soybean flour. The cultivation is anaerobically conducted in a usual manner, because Zymomonas mobilis is anaerobic. Then, the culture mixture is allowed to react with glucose and fructose in an aqueous medium in the presence of cell bodies whereby the glucose is quantitatively converted into gluconic acid or its salt and the fructose is into sorbitol simultaneously. These products are isolated from the reaction mixture according to a conventional method. |
