PURPOSE:To obtain a bound lobster flesh sustaining chewiness with moderate springiness thereof and intact unique flavor without cavities is a bound substance by sprinkling a binder on a small-sized shucked lobster flesh, pressurizing and binding the lobster flesh under reduced pressure. CONSTITUTION:A binder, e.g., a powdery substance consisting of natural animal or vegetable protein, gelatin, etc., in an amount of about 1-5wt.% based on a small-sized flesh shucked by a conventional method or a waste flesh thereof is added thereto and adequate amounts of additives and seasonings, as desired, are further added. The resultant mixture is then pressurized and bound under reduced pressure, e.g., 0-100mmHg. |
