PURPOSE:To provide a smooth rice flour noodle having a strong body by adding the leaves of Eucommia ulmoides or an extract thereof when the noodle is prepared of the rice flour and wheat flour. CONSTITUTION:A raw material mixture comprising approximately 70wt.% of wheat flour and <=30wt.% of rice flour is mixed with the dried powder of Eucommia ulmoides, an extract solution of the Eucommia ulmoides or the dried product thereof and further with a saline solution and subsequently kneaded to give a dough of noodle, followed by preparing the noodle by a conventional method. |
