The process consists in subjecting clarified truffle washes to a percolation on a column filled with a solid adsorbent which binds aromatic constituents present in the said washes and in allowing this treatment to be followed, after removal of water from the adsorbing agent, by a desorption of the aromatic substances while carrying out an elution by means of an edible solvent heated to its boiling point, through the adsorbent solid.
