The invention relates to the food industry and more particularly to a new process for producing blackcurrent seed oil. More precisely, it relates to a process in which the crushed and dried blackcurrent seeds are subjected to extraction with a supercritical fluid in two extraction autoclaves (POT 1 and POT 2) set up in series and then a first heating decompression operation in a settling vessel (POT 3 and POT 4) is carried out to separate a first lipid fraction which is rich in polyunsaturated fatty acids and then a second heating decompression operation in a settling vessel (POT 4) and separators S1 and S2 is carried out to produce, after combination of these fractions, an oil containing virtually all the polyunsaturated fatty acids present in the starting material. The invention also applies to salad oils obtained according to the process defined above. <IMAGE>
