The apparatus comprises a cell 2 to which a microwave generator 1 is attached which sends, via a waveguide 3, a flux intended to separate the honey from the wax without adversely affecting its qualities in any way. The great advantage of this invention makes it possible to treat large quantities of honey and wax, while preserving the biological value and the organoleptic qualities of the honey. The procedure does not destroy the fructose in the honey and does not increase the quantity of hydroxymethylfurural. <IMAGE>
