The device for drawing off an elongated baked roll (25) from a baking roller and for cutting the said roll into rings is composed of an elongated hollow mould (30) having two longitudinal halves (31, 32) which are foldably connected to one another, which mould (30) has an elongated, axially symmetrical cavity for accommodating the baking roller (10) and the roll (25) for baking, which cavity is divided into chambers by means of transverse walls which are parallel to one another. Each transverse wall is composed of two coplanar transverse wall halves (36, 37) which are assigned to the longitudinal halves (31, 32) of the hollow mould (30) and are provided on their inner edges with symmetrical inside curves, the edges (38) of which adjoin the outer circumference of the baking roller (10) when the hollow mould (30) is closed. When the hollow mould (30) is closed, the transverse wall halves (36, 37) radially segment the roll (25) for baking, producing rings. Furthermore, the baking roller (10) can be removed from the baked roll (25) without damage to the latter. <IMAGE>
