The present invention relates to a preserving method, particularly for fresh seaweed. Method characterised in that it consists essentially in preparing the seaweed after harvesting by washing and draining, in cutting it up, in placing it in a vessel, salting it prior to moving it, in producing a lactic fermentation induced by sequential seeding of heterofermentative and homofermentative lactic bacteria, then in removing the fermented seaweed from the vessel and, finally, in washing it and in packaging it. |
