New concentrated aqueous compounds for the production of multipurpose extinguishing foam, characterised in that they contain polyhydroxylated fluorosurfactants where the fluorinated radical is an alkyl made up of 4 to 20 carbon atoms, such as perfluoroalkylated polysaccharides and/or perfluoroalkylated polyhydroxypolyamines containing at least one quaternary nitrogen atom. The compositions proposed by the invention make it possible to obtain pseudoplastic concentrates of low viscosity and AFFF synthetic or AFFF proteinic emulsifiers of Newtonian fluidity, while retaining a very great extinguishing effectiveness not only on hydrocarbon fires but also on fires of volatile and dehydrating polar liquids.
