It relates to a process for the enzymatic production of sweet juice, fermentable into ethanol, from starchy plants, by a homogenisation treatment of a ground product of the said plant so as to obtain an aqueous dispersion at 30-50 % by weight of dry matter, by boiling and liquefying prehydrolysis by means of alpha-amylase in a pulper and, after cooling, by saccharifying hydrolysis by means of amyloglucosidase.
