Pyruvate oxidase which contains at least one replacement of amino acid 178 and/or of amino acid 425 in the amino-acid sequence of the wild-type enzyme and is more stable than the wild-type enzyme. It is prepared by using a recombinant DNA which contains at least one replacement of base 532, 533, 534, 1273, 1274 and/or 1275. |
