PRODUCTION OF MONOGLYCERIDES BY ENZYMATIC TRANSESTERIFICATION A process for the production of high purity monoglycerides by lipase-catalyzed transesterification, and the products of the reaction, are described. In the method of the present invention, oils or pure triglycerides are combined with alcohol, a small amount of water and a lipase. The reaction proceeds under mild conditions, and produces high yields of .beta.-monoglyceride product.
