In the process and device for the mechanical separation of meat from poultry carcasses a series of tools arranged along a conveyor (3) provided with receptacles (5) for holding the poultry carcasses (58) is used, said tools being shaped with regard to production of a high- quality final product in high yields. The processing of the poultry carcasses (58) conveyed by the receptacles (5) and securely held in these is carried out sequentially by controllable scrapers (8), which separate the connection between the outer breast pieces (66) and the coracoid bones (62), ribs (65) and optionally the inner breast pieces (67), by controllable peeling knives (22), which detach the outer breast pieces (66) from the wing joints (63) and the wishbone (64), by a retaining device (30), which detaches the outer breast pieces (66) in one piece as a double fillet, and by a tool (40) with scrapers (41), by means of which the inner breast pieces (67) are scraped off from the skeleton after the skin surrounding these has been destroyed by means of a tool (37).
