<p>PURPOSE:To obtain the title SAKE having good flavor from various kinds of raw materials inexpensively and low cost by adding a nontoxic and insoluble fine floating substance to a sugar solution containing a fermentable glucide, etc., and subjecting the blend to alcohol fermentation. CONSTITUTION:A sugar solution containing a fermentable glucide or a starchy raw material is liquefied and saccharified to give a material, which is filtered to prepare filtrate. The filtrate is incorporated with a nontoxic and insoluble fine floating substance or ground grain and subjected to alcohol fermentation to give the aimed SAKE.</p> |
