PURPOSE:To prepare frozen rice preservable without causing deterioration of the rice and easily stacked in storage by putting polished rice in flat state into a tray having a flat bottom and quickly freezing the rice in a freezer. CONSTITUTION:The top of rice 1 heaped on a tray 5 is smoothed to the level of the tray edge by transferring a plate, etc., along the edge of the tray 5. The rice-containing tray is sandwiched between an upper and a lower conveyors cooled with a refrigerant and passed through a freezing apparatus 4 containing the upper and lower conveyors. The frozen rice 6 produced by the above process is removed from the tray 5, stacked in plural stages and stored. |
