PURPOSE:To prepare the subject substance having improved solubility in water without requiring any special apparatus or means by purifying alpha-L-aspartyl-L- phenylalanine methyl ester(salt) is the presence of a specific additive such as sodium alginate. CONSTITUTION:When alpha-L-aspartyl-L-phenylalanine methyl ester(salt) is purified from an aqueous medium, the purification is carried out in the presence of one or more of additives selected from sodium alginate, carboxymethylcellulose sodium salt, starch glycolic acid sodium salt and polyacrylic acid sodium salt preferably in an amount of 0.01-3wt.%.
