The invention relates to a process for producing clean and dry fruit seeds. It relates more specifically to a process in which seeds obtained from fermentation or distillation musts are subjected to a separation by screening roughly, to feeding to a rotary drier until the moisture level is less than 15 %, to a cooling by circulation of cold air and to a finer screening. The waste and fines separated may be recycled in order to produce a new arrival of seeds. These seeds thus obtained find a use in diets and in the production of oil.
