Method and apparatus for cutting away the fatty end when removing intestines from pig carcasses. For cutting away, an apparatus is used comprising a spigot 3, designed for introduction into the rectal opening of the carcass. A cylindrical, rotatable knife 1 is mounted concentrically about the spigot 3. The spigot and the knife are electrically insulated from one another and can each be connected to a separate pole of a power source 10. The musculature around the rectal opening of the carcass is electrically stimulated by means of the spigot and the knife, which serve as electrodes when they are applied in or on the musculature when cutting away the fatty end. The electrical stimulation of the musculature reduces the risk of contamination of the cut surface, which is formed when cutting away the fatty end, and cutting away is facilitated. <IMAGE>
